Kale chips are low in calories, are full of powerful antioxidants and are a good source of calcium, vitamins A and C and fiber. They are great for a healthy alternative to other type of chips and great alternative for snacking.
Remove the thick stem from the kale and discard.
Tear the kale leaves into bite-size pieces. Place kale in a large bowl. Pour olive oil in the palm of your hand and gently massage the kale so that the oil coats both sides.
Divide kale between 2 baking sheets and place in the oven.
Roast the kale in preheated 250 degree oven until the leaves are crispy,
Place popcorn in a large bowl.
Pour melted butter over popcorn, sprinkle with BBQ seasoning and toss well to coat.
lightly crush the kale chips on top of the popcorn, toss and enjoy.
Ingredients:
- 4 cups plain popcorn
- 2 tablespoons butter * (optional) For Vegan and Paleo diet use coconut oil
- 1 large bunch of curly Kale, washed well, dried
- 1 tablespoon Olive oil
- ¼ teaspoon seasoned salt
BBQ Seasoning:
- 2 tablespoon smoked paprika
- 1 tablespoons chile powder
- 1 tablespoons brown sugar
- 1/2 tablespoon garlic powder
- 1 teaspoons salt
- 1/4 teaspoon mustard powder
Directions:
1- Preheat the oven 275 degrees F.

5- Roast the kale in 250 degree oven until the leaves are crispy, 20 to 25 minutes. Check the kale to see if it’s dried out. if necessary, return to the oven for another 5 minutes, or until the kale is crisp, but still dark green.*
6- Remove from oven and let it cool.
7- Place popcorn in a large bowl.
8- Mix all the BBQ seasoning ingredients in a small bowl.
9- Heat butter in a small saucepan over low heat. Pour over popcorn, sprinkle with BBQ seasoning and toss well to coat.
10- lightly crush the kale chips on top of the popcorn, toss and enjoy.
* Use clarified butter which has a lower water content than butter so it makes popcorn less soggy.
* Cooking time may vary based on how much kale there is on the “bunch” and on the thickness of the leaves.
