These crispy on the outside and tender inside onion rings can be served with about anything, hot dogs, hamburgers, steak, BBQ beef/pork/chicken sandwiches, BBQ chicken….. or serve with Chipotle Tartar Sauce as an appetizer.
Ingredients:
- 2 large sweet onions
- 1 quart buttermilk (for Paleo and Vegan Style, add two cups soy milk to 2 tbsp white vinegar)
- 2 cups flour (for Paleo style and Gluten Free diet use tapioca flour)
- salt & pepper
- 2 teaspoons Tabasco Sauce or any other hot sauce
- Oil for frying
Directions:
1- Heat the oil in a large, heavy-bottomed medium stockpot over medium heat.
2- Slice onions into 1/4-inch rings.
3- In a large shallow container, combine flour, salt and black pepper. Set it aside.
4- Pour the buttermilk into another bowl and add the hot sauce. Mix well. Add the onion strips and turn to coat. Cover dish with plastic wrap and refrigerate for 1 hour.
5- Pull handful of onions out of the batter, let the excess batter run back into the bowl. Gently toss in flour mixture to coat.
6- Shake off any excess flour. Fry the onion rings, turning once or twice, until golden brown and tender, about 2-3 minutes.
7- Drain on paper towels. Let oil come back to temperature before frying next batch. Repeat until all of the rings have been cooked. Serve hot.
Tips: Use Vidalia onions if they’re in season, otherwise any other sweet onions will work.
