Cucumber Drink With Honey Mint Syrup

This is a refreshing and thirst quenching drink, perfect for hot summer days!. It cools you down from the inside out!

The sweet-and-sour vinegar mint syrup made with vinegar, honey and fresh mint is mixed with water and grated cucumber, and served ice-cold. The old-timers swore that this drink made the humidity more tolerable.

Note: The suggest ratio of syrup to water can be adjusted to taste by adding more or less syrup or water.

Any left over syrup can be refrigerated in a glass jar with a tight lid and use as needed.

Honey Mint Syrup

Bring water and honey to a boil in small saucepan over high heat stirring constantly, until honey dissolves. Add vinegar and reduce heat to low, and simmer for 20 minutes or until you have a thick syrup. Take pan off heat, add the mint sprigs to the syrup and allow them to seep while the syrup cools.

Assembly For Cucumber Drink with Vinegar and Mint Syrup

Ingredients:

  • 
1 cup honey
  • 2/3 cup water
  • 
1/4 cup wine vinegar
  • 3 large sprigs fresh mint plus additional for garnish
  • 1/2 English seedless cucumber, peeled and grated plus additional sliced for garnish

Directions:

1- To make the syrup, bring water and honey to a boil in small saucepan over high heat stirring constantly, until honey dissolves.

2- Add vinegar and reduce heat to low, and simmer for 20 minutes or until you have a thick syrup.

3- Take pan off heat, add the mint sprigs to the syrup and allow them to seep while the syrup cools. Discard mint sprigs.

4- For a single glass of this drink, add a couple of tablespoons of syrup in a glass, add few pieces of ice, cup of water, couple spoonful of shredded cucumber, stir and garnish with fresh mint. Serve with a straw.

For a party, assemble everything before your guests arrive.You can mix ahead the syrup and water in a pitcher, add I part syrup to three parts cold water, stir well and set aside. Assemble the fillings; fresh mints for garnish, ice, shredded cucumber, and prepare the glasses top with sliced cucumber. Don’t forget the straws!

If you like to serve as an alcoholic drink, adding rum turns this drink into something way better than a mojito with a lot more flavors.
