Zucchini Bread

This is a quick and easy zucchini bread flavored with cinnamon and vanilla.


  •  2 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1/2 teaspoon vanilla
  • 11/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup shredded zucchini
  • 1/2 cup black walnuts (optional)


1- Preheat oven to 325°F and lightly oil an 8-inch loaf pan and set aside.

2- Put shredded zucchini on top of paper towels or place them in a colander and press or squeeze with hands to get some of the excess liquid out.

3- Mix together the eggs, sugar, oil and vanilla in a large bowl.

4. In a separate bowl stiff together the flour, baking soda, baking powder and cinnamon.

5- Add the dry ingredients mixture to the wet ingredients and stir until well combined. Stir in shredded zucchini and chopped walnuts until well combined.

6-  Pour batter into the prepared loaf pan. Bake for 50-55 minutes or until a toothpick or knife inserted in the center comes out clean.

7- Let it cool for 10 minutes. Loosen the sides and remove from pan. Let it cool completely before slicing.
