I made mashed sweet potatoes few nights ago for shepherd pie, loved the taste of it. Tonight I tried to get creative and made the mash and gave it a twist. So I made a few changes , add garlic and spinach and gave it go. It was delicious!! My daughter likes to have comfort food but still healthy for late school nights. I gave her a bowl of this creamy, sweet and savory goodness when she got home. She loved it! She like the fact that It’s so very simple for her to make!
Ingredients:
- 2 lbs white sweet potatoes, peeled and cut into large pieces
- 1 pkg. (10 oz.) Baby spinach leaves, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- ¼ cup heated milk (for Paleo and Vegan style use unsweetened almond milk)
- salt and pepper to taste
Directions:
Boil the sweet potatoes in salted water until tender about 15-20 minutes.
While the potatoes are cooking, heat olive oil in a large skillet over medium high. Add garlic and spinach and sauté until spinach is wilted about 2-3 minutes.
Drain the sweet potatoes and transfer them to a large bowl. Mash them with potato masher. Add the spinach-garlic mixture, milk , salt and pepper. Stir to combine. Check for seasoning.
