Green Beans With Roasted walnuts And Parsley


Haricot Vert is the French term for green beans. Generally haricot verts are thin, crisp and tender green beans.

Makes 8 servings

Ingredients:

  • 2 pounds haricot vert beans, trimmed
  • 5 tablespoons butter
  • 3/4 cup chopped roasted walnuts
  • 1/3 cup finely chopped fresh Italian parsley

Directions:

1- Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain and transfer to bowl of ice water and cool. Drain and pat dry. (Can be prepared 1 day ahead. Cover and refrigerate.)

2- Melt butter in large deep skillet over medium heat. Add beans and walnuts; toss to heat through, about 5 minutes.

3- Mix in parsley. Season with salt and pepper. Transfer to bowl.
