Ingredients:
- 2 cups long-grain basmati rice, cooked
- 2 tablespoons olive oil
- 1/2 cup barberries (dried)
- 1 pkg. firm tofu cut into small cubes
- 1 tablespoon sugar
- 1/2 teaspoon saffron
- salt and pepper to taste
Directions:
1- Wash barberries well, drain, and saute in a small pan with 1 tablespoon oil and 1 tablespoon sugar for 2 minutes, stirring, or until plump. Add saffron, mix well and set it aside.
2- In a large frying pan, sauté tofu in 1 tablespoon olive oil until lightly browned for about five minutes. seasoned them with salt and pepper. Add the barberry mixture to the tofu and mix well.
3- Cook rice using the recipe given for plain rice.
4- For serving pour half of the plain rice on a serving dish then pour half of the barberry/ tofu mixture on top, do the same with the rest.
5- Enjoy
Note: Dried cranberries are a good substitute for barberries.
