This dish is a delicious combination of rice, green beans, mushrooms, tomato sauce and spices and sure to suite most people’s taste. Usually serves with plain yogurt or Tomato Cucumber Salad.
Ingredients:
- 2 cups uncooked basmati rice ( cook rice according to the earler post Plain Rice)
- 1 lb green beans, trimmed, wash and chop into 1 inch lengths
- 1 Ib sliced fresh mushrooms
- 1 medium onion, finely chopped
- 2 garlic cloves, chopped
- 1 14.5 can diced tomatoes
- 1 tbsp tomato paste
- 1 tsp turmeric
- salt & pepper to tast
- ½ teaspoon red pepper flakes (optional)
Directions:
1- Sauté green beans in 1 tablespoon oil for 8-10 minutes. Set aside.
2- In a large non-stick pot over high heat, sauté onions in 1 tablespoon oil until translucent.
3- Add garlic and mushrooms and continue cooking for another 4-5 minutes.
4- Add green beans, diced tomatoes, tomato paste, turmeric, salt, pepper, and red pepper flakes (optional), mix well. Pour in one cup water.
5- Cover the pot and bring to a boil. Reduce heat to medium-low and simmer until sauce is thick, about 30 minutes, stirring occasionally. Taste and adjust seasoning.
6- Meanwhile, bring 12 cups of water and 2 tablespoon salt to a boil in a large nonstick pot. Add rice; stir and return back to a boil. Make sure you stir the rice twice with a wooden spoon to loosen any grains that may have stuck to the bottom. The grains should be soft on the outside but still firm in the center. Drain and rinse with cold water to stop additional cooking.
7- Add 2 tablespoons oil to the same pot. Add a layer of rice to the pan followed by a layer of green beans and mushrooms mixture. Continue to alternate the layers until all the ingredients are used.
9- Cover the pot with a large napkin. Put the lid on and cook over medium-high heat until it begins to steam about 4-5 minutes. Reduce the heat to low and cook for approximately 30-40 minutes. Avoid overcooking the rice otherwise the rice become too mushy.
10- Using one spatula full of rice at a time, place the rice on a serving platter without disturbing the crust.
11- Finally, remove the crusty bottom and serve in a separate plate.
