Tzatziki sauce is a Greek cucumber yogurt sauce. It’s a healthy sauce great on meats, grilled vegetables, salads and as a raw veggie dip! They make a great topper for pita sandwiches too.
Ingredients:
- 3 cups cold plain Greek yogurt (either full fat or low fat will work)
- 1/2 English (seedless) cucumber, peeled
- 2 cloves garlic, finely minced
- 2 tablespoon freshly squeezed lemon juice
- 2 tablespoon chopped fresh dill or 2 teaspoon dried dill
- Salt & pepper to taste
Directions:
1- Shred the cucumber with a grater. Then place the cucumber in a clean kitchen towel and squeeze out the excess moisture.
2- Gently fold the cucumber, garlic, lemon juice, dill, salt and pepper into the yogurt with a spatula.
3- Taste for seasoning. Let it set in the fridge for at least an hour for the flavors meld together.
Note: You could store in the refrigerator in an airtight container for up to a week.
